Milk wash is a century old practice where milk was added to a liquor to wash it and make it taste cleaner and better. In our recipe we employ the same technique but not to clean the spirit but to remove the tannins that are introduced during the infusion of tequila and tea. The milk is then removed by adding few drops of lemon juice. The milk whey and casein starts to separate and the casein are removed which takes away the tannins from the tea.
