One of our best selling cocktails at @coahongkong “Horchata de Pistacho” . A lot of prep goes into this drink. The Horchata is homemade along with the pistachio orgeat. The left over strain bits of pistachio are then baked to make pistachio biscuit for the garnish on top. It is to ensure every part of the pistachio are used without any waste. We add whey that is separated from milk to add a silky texture to the cocktail (instead of using egg white as it may smell bad sometimes). The drink is topped with sweet potato dust to give an aroma similar to cooked agave as the base of the drink is with Tequila!
