Oaxaca was dominated by a group of noble natives belonging to the Zapotec and Mixtec cultures. King Cosijoeza, ruler of the city of Zaachila, had a daughter to whom he gave the name of “Donají” meaning “grand soul”. The Mixtecs and Zapotecs had a series of violent disputes, causing the Mixtecs to take revenge of the King by sacrificing his daughter, the Princess Donají, she was laid to rest near theAtoyac river.
It is said that years later when her body was found, it was still in perfect condition, and from her head beautiful species of wild lilies had grown, this image was immediately converted to be the symbol of the Zapotec town.
Mezcal Donají Joven Olla de Barro is an ancestral mezcal from the company Mezcales Tradition Chagoya. Ancestral mezcal is the highest category in regards to old school production.
Made with agave Espadin. It is traditionally produced using a horno, wooden-mallet milling, and open-air fermentation. This mezcal is double-distilled in clay pots in Sola de Vega. Sola de Vega is located deep in the mountains of Oaxaca. Its altitude varies from 700 to 3000 meters above sea level. Its climate is generally cold. This mezcal has aromas of fresh herbs, sweet fruit, and wet earth. The taste is decidedly earthly with sweet notes of pollen and honey.
